Sharing a tiny kitchen with three roommates can get hard, but the best way to stay healthy while not ordering takeout is to have a few staples. One of my favorite healthy dishes to whip up is quinoa fried rice.
Quinoa is high in protein and low in fat!
It is also so easy to cook, one cup quinoa to two cups water and voila- boil away!
Mix the one cup of quinoa with two cups of water in a pot and close the lid.
The quinoa will slowly soak up all the water and within 15-20 minutes your quinoa will be ready.
While the quinoa is cooking, grab a frying pan. In the fry pan mix in:
1/2 cup carrots
1/2 cup onion
1/2 cup mushrooms
1/2 cup broccoli
To be healthy fry these veggies in coconut oil (extra-virgin olive oil can be used as a substitute).
After 5-7 minutes of frying up the veggies, add in two eggs!
Once the egg is fully cooked with the veggies, it is time to add in the quinoa.
(Make sure the egg is fully cooked or it will make the quinoa mushy)
Final touches- add in your sauce of choice!
Teriyaki or soy sauce works best. While the flame is very low add in the sauce and continue to mix.
After fully saturated with sauce, your fried quinoa is complete!
(If you prefer no sauce, salt and pepper can be added for taste)
